Cascara comes from the coffee cherry. The seed of the it we call coffee is used while the fruit used to be discarded. The term itself has a Spanish origin, meaning husk or peel. Sounds appetizing right? Normally when you think of coffee byproduct you think old coffee grounds and the unpleasantness of an early mornings. Cascara however tastes pretty damn good, it’s got subtly sweet notes of maple that taste amazing with crisp salty bacon. Try it or don’t, I don’t care
